Staphylococcus aureus and Food Poisoning

Be careful with your food this summer - avoid food poisoning!
This article from ABS-CBN Interactive, points out a variety of bacterial food-borne infections that are possible to acquire and how to recognize them. For our intents and purposes, this is the section about food poisoning via Staphylococcal enterotoxins:

Staphyloenterotoxicosis, as cited in Azanza’s study, is a type of food poisoning characterized by severe nausea, abdominal cramps and profuse vomiting and diarrhea two to eight hours after eating food contaminated with Staphylococcus aureus.

These bacteria, according to the USDA-FSIS, can be passed on from person to person through food from improper food handling and can multiply rapidly. A person afflicted with this illness can recover within two to three days, but it may take longer if severe dehydration occurs.

I think most of us have probably been through a bout of this or another food borne illness in our lifetimes - they are not fun and sometimes can be really dangerous. Be careful with your food supply this summer!
